I have made this several times. Its very healthy, flavorful and super simple to make. My husband HATES squash, so I chopped it up in tiny pieces and didn't tell him that it was in it until it was all gone....he loved it! Try it with your kids, might get them to eat some veggies they wouldn't normally eat....sure worked on my husband. It goes great with a variety of pork and chicken recipes (I bet it would even be good with chopped cooked chicken sauteed with the veggies.) One time, I didn't have the squash or zucchini on hand, so I just used celery, bell pepper, onion and extra carrots. This is one of those recipes where you can substitute just about anything. Oh and if you are wondering what couscous is, I believe it's an Indian side, and is basically made out of the same stuff as noodles (don't quote me on that!) but tiny. You can find it usually by the rice in the grocery store and comes in a small box.
Makes 4 Servings.
1 C chicken broth
3/4 C uncooked couscous
1 medium yellow squash, chopped
1 medium zucchini, chopped
3/4 C carrot, chopped
1/2 C green bell pepper
1/4 C sweet onion (white, red or green would work as well)
2 tbsp butter (or olive oil)
1/2 tsp Italian seasoning
1/2 tsp lemon-pepper seasoning (sometimes I don't use this)
- In a small saucepan, bring broth to a boil. Stir in couscous. Remove from heat, cover and let stand for 5-10 minutes or until broth is absorbed.
- Meanwhile, in a large skillet, saute the squash, zucchhini, carrot, bell pepper, and onion in butter until tender. Stir in seasonings.
- Fluff couscous with a fork; toss in veggies mixture.
