A Little Of This and That (random recipes: marinades, sauces, drinks, ect.)

Jalapeno Lime & Garlic Marinade

This recipe came with the tag stuck in an oregano plant I bought this last summer.  It called for steak, but the several times I have used it, I diced up whatever cut of beef roast that was on sale into 2 in cubes and made shishkabobs.  For veggies I use fresh jalapenos, onion, and green bell peppers (all lightly salted before I line them up on the skewer). The flavors all mix so great together.  I bet this would also be great on chicken...I will let you know when I finally try it, or if you beat me to it, please share!

This makes enough marinade for 1 -1 1/2 lbs of meat.

4                large garlic cloves
3-6             jalapenos
1/2 Tbsp    black pepper
1 Tbsp       salt (kosher or sea salt if you have it)
1 Tbsp       dried oregano
1/4 C         fresh squeezed lime juice
1/4 C         fresh cilantro (this is something I added)

Combine all ingredients in a blender or food processor and puree.  Pour over meat in shallow pan or large freezer bag.  Let sit in fridge for 1-3 hours.
